Carrot chestnut mash:
3 ounces carrot taste, if carrot is bitter, cook if using mild, commercial carrots, use 4 ounces and do not heat 1/8 cup (.8 ounce) split pea flour or 1/4 cup tofu 3 tablespoons (1 ounce) chestnut flour or 1/3 cup hazelnuts (make into flour by processing along with grain and pea flour in a blender) 1 tablespoon (.4 ounce) canola oil 1 tablespoon (.3 ounce) whole wheat flour 2 teaspoons (.3 ounce) sugar 1 pinch salt or 1/8 teaspoon soy sauceCut off the tops and any green from the carrots.
Cut the carrot into 1/4 inch pieces.
Into a personal blender/smoothie maker put: the carrot and 1/8 cup water, 1 tablespoon oil, and 1 to 2 teaspoons sugar. (If won't flow add 1/8 cup water and later cook carrot slurry with chestnut/ pea mixture adding 1 minute to the given heat time, so the excess water will be evaporated away.)
Run until a smooth slurry is produced.
Into a mixing bowl put 1/8 cup peas powder, 3 tablespoons chestnut flour, 1 pinch salt, and 1/8 cup water.
Spread the mixture on a plate about 1/4 inch thick making a flattened donut shape with a 2 inch hole at the center for even heating.
Heat in a 1000 watt microwave oven for 1 minute 45 seconds.
Add 5 seconds for oven to start heating. Plus 15 seconds to heat plate. To raise to boiling: 2.8 ounces X 20 seconds per ounce = 56 seconds. Dry weight is 1.8 ounces. Water to leave in is 15/85 times dry weight (15/85 X 1.8) = .3 ounces. Water to remove is total water minus water left in (1 - .3) = .7 ounces. Plus to evaporate water: 46 seconds per ounce X .7 ounce = 32 seconds.
Allow the cake to cool for a few minutes.
Cut the cake into 3/4 inch pieces.
Process the cake pieces into a crumb texture.
Combine all ingredients including 1 tablespoon whole wheat flour in a mixing and/or portion bowl and mix until uniform.
Makes one serving, enough for a light meal if a side of fruit is added. Could serve with a side of basil biscuit with a wedge of apple.
