If a recipe calls for an ingredient not available where you normally shop, you can try this list of sources for uncommon foods and kitchen tools.

Apple spinach/chestnut cookie:
3 ounces apple 
  or 3 ounces pear
1 teaspoon (.07 ounces)spinach powder
1 tablespoon (.25 ounce) corn flour
1 tablespoon (.45 ounce) bean flour
1 tablespoon (.33 ounce) chestnut flour
1 tablespoon (.33 ounce) sunflower seeds
  or 2 teaspoons 30 percent added oil non roasted sunflower
   seed butter
  or 2 teaspoons non roasted tahini
1 teaspoon (.15 ounce) canola oil
1 to 2 teaspoons (.33 ounce) sugar according to sweetness of apple and your preference
1 pinch salt
Remove the cores and skin from the fruit and cut into 1 half inch or so pieces.

Put into a 1 or 2 cup high speed blender or processor:
the apple pieces, 1 quarter cup water, 1 tablespoon sunflower seeds, 1 teaspoon oil, 1 to 2 teaspoons sugar, 1 pinch salt. Run the blender until a smooth slurry results.

Put the slurry into a small mixing bowl and add

1 tablespoon bean flour, 1 tablespoon corn flour, 1 tablespoon chestnut flour, and 1 teaspoon spinach powder.


Divide the mixture equally in 2 3-inch microwaveable bowls.

Heat, uncovered, in a microwave oven until boiling hot plus time to evaporate enough water to firm, 6 minutes 40 seconds total in a 1000 watt oven.
(6.9 ounces X 20 equals 138 seconds.
Add 5 seconds for oven to begin heating.
Plus 20 seconds to heat dishes.
Dry weight is 6.9 ounces minus 4.7 ounces total water equals 2.2 ounces.
Water to leave in is 20/80 times 2.2 equals .55 ounces.
Water to remove is 4.7 minus .55 equals 4.15 ounces.
To thicken: 46 seconds per ounce times 4.1 ounces equals 189 seconds.
Plus to replace heat lost to air: 189/60 seconds per minute X 12 seconds.
per minute = 38 seconds plus 38/60 X 12 = 9 for a total of 47 seconds.
Assumes fruit is 90 percent water.
Let cool for a few minutes before eating.

Definite apple flavor, soft and moist biscuit texture, tangy, a little sweet, pleasant moderate starch flavor, the spinach and chestnut flavors are not easily distinguish instead their flavors are coalesced and enjoyable.
